cv::Mat is already reference counted.

Instead allow selection between two new subtractions:
1. Absolute Difference
2. Saturated Difference (Truncation at 0,255 limits)

This allows the CI-built tracker to actually be loaded from the AppImage build without having the exact same boost version installed system-wide..
